GCSE Catering: International Week BY susu2799 International week The local hotel in my area is holding an international week. As the trainee chef I have been invited to take part and have been asked to prepare a two course meal from a country of my choice. Planning: I have chosen this task because I thought it would be quite interesting as we get to explore many different countries and their foods. I am also very passionate about international food. This was also a very good way to learn new cooking skills the country may use.
I had many difficulties trying to find a country that would be suited or this event as many countries caught my attention due to their traditions, foods and skills of cooking. I plan to investigate this task by researching different countries and the food they traditionally serve. In order to decide on my country I had to collect various types of information. In order to do this I have to find information about different countries. I will be researching using the internet and books. This is very beneficial as I can get to know more about the country and explore the different kinds of ingredient and cooking skills.
I will also be visiting some restaurant to help e chose what country I should choose. Also by carrying out this task I will be able to explore how dishes are presented. I wanted to do America because I wanted to prove that they didn’t only serve fast foods but a vast of various healthy foods, such as the burger I have made which was a prime topside beef burger. From the research I have carried out I discovered that American had a range of foods and traditions even though people may think that American cuisine is all about fast foods.
I found out that American desserts are mostly made with apples e. g. ; apple crumble and apple pie. I believe that the most well-known dish that everyone’s knows about because different countries have adapted it is the burger. America also has many fast food restaurants and grills. I have also chose to do American because people may think that American food is simple and quick to prepare but I wanted show then that even though it may be simple I wanted to use the skills I have learnt in the past to make my dish as well presented and as high skilled as possible.
This led me to my conclusion. American cuisine is very popular even to different countries around the world from Asia to Africa. Research: Research is helpful for everyone who wants to find information that you may need. I will be researching because it will help me do better in my assessment and I think that I could learn much more from researching. There are many ways of researching for instants you can find information in a book or a magazine. You can also hand out questionnaires to people on the streets.
The type of research that I will be doing is based on international food. The researches that I will be carrying out is by visiting an all-you-can eat buffet and Just try out the different food there are. It will also help e choose a country that I will try to copy and cook from. The trip was really DeneTlclal as I got to see tne way a DuTTet was served ana tne way tne s were presented on their displays. The other type of research I will be doing is looking for recipes in magazines, books or on the internet.
I will also be finding out more information on the country that I will be choosing so I can find out more about the different type of foods and cooking method they use in their country. I will be food tasting international readymade meals from the supermarket that has already been cooked and are ready to serve. We tasted food from India, Morocco, China and England. America was not included in the food tasting though and so I wanted to cook a dish that wasn’t usually sold in ready meals in the supermarkets.
There were many types of food for instants we had a vegetable couscous from Morocco and Jalfrezi chicken from India. Research Table: The reason that I have made this research table was to help me see what type of research that I have carried about and whether it was useful and how t was useful. This also helped me get a better understanding of the task. We had to make two dishes one week then the other two next week.
We had two hours to prepare and I would say that it was a generous amount of time as I finished quite early. It helped us get more practice and that we could correct our mistakes. It also helped us find ways in which we can get faster and not lose time. But from what I have done all my dishes have come out very nicely but with some minor mistakes which will not happen next time. Looking in magazines We looked thorough magazines to help us get some ideas. We found many types of food and their recipes. We also fund type of themes and lots of inspiration.
This gave me a few ideas about what I was going to cook. Food tasting We tasted different foods from different countries. This helped us give us some ideas on what certain food from a country tasted like and how this was presented. We also did the task to give us an idea on what country would be well suited for the event. I wanted to do American instead even though there wasn’t American food in front of me.
So I didn’t get to see how American food is presented and how it tastes like. So I carried out my own food tasting to compare it to the other countries. Going on a trip We went to an all-you-can-eat buffet and we wanted to find out the different foods presented there. We also wanted to find out what type of food would be suitable for international week. We also got to taste the food and explore the tastes of different countries such as India, china and even America. This trip to the all-you-can-eat uffet helped me pick out foods that tasted good. It showed me how dishes were presented.
The tables that were set were very elegant and the atmosphere was welcoming. The foods were delicious. They had foods from ice cream to burgers. American Cuisine: When it comes to cuisine, America lives up to the saying “bigger is better. The cuisine of the United States refers to food preparation originating from the United States of America. European colonization of the Americas yielded the introduction of a number of ingredients and cooking styles. The New England colonies were extremely similar in their dietary habits to those that many of them had brought from England. While in the southern colonies, they could farm almost year round, in the northern colonies, the growing seasons were very restricted. In addition, colonists’ lose proximity to the ocean gave them a bounty of fresh fish to add to their diet, especially in the northern colonies.
Wheat, however, the grain used to bake bread back in England was almost impossible to grow, and imports of wheat were far from cost productive. Substitutes in cases such as this included cornmeal. The Johnnycake was a poor substitute to some for wheaten bread, but acceptance by both the northern and southern. As many of the New Englanders were originally from England game hunting was often a pastime from back home that paid off when they immigrated to the New World. Hot dogs and hamburgers are both based on traditional German dishes, but in their modern popular form they can be reasonably considered American dishes.
Pizza is based on the traditional Italian dish, brought by Italian immigrants to the United States. Many companies in the American food industry develop new products requiring minimal preparation, such as frozen entrees. Many of these recipes have become very popular Trendy food items in the 2000s and 2010s include doughnuts, cupcakes, macaroons, and meatballs. Reasons Tor cnolce: I have chosen to do America as people find this country to be quite simple as they are popular in fast foods and mostly burgers.
I have decided to choose this country as I wanted to show people that even though American cuisine may be simple you can still use your own twist to make it high skilled. The two dishes I have chosen to make is a burger called Prime Topside Beef Burger served with home-made rosemary- salted chips which I think will accompany the burger very well. My burger will also be served with home-made mustard mayonnaise. I will also be making the burger bun rom scratch as this will also add marks to my practical. I chose to make a burger as it was very versatile because you can make different burgers if you Just change the ingredients.
The second dish that I will be preparing is a buttery cake snack called Twinkies. Twinkies are a very popular dessert not only in America but also in many other countries. I will be making the filling out of marshmallow cr?©me/ fluff which is an American food item. I have chosen to make Prime Topside Burger because it was quite a challenge for me as I had to do many things in two hours and I like a challenge. I will be using a wide range of ingredients. Burgers are also a very popular dish and I wanted to make the dish very complicated by making my own mayo, chips and burger bun.
This is very high skilled. It will also look good on the table. I have chosen to do Twinkies as my second dish because this too is a very popular dish. I Marshmallow cr?©me/ fluff were a new food item for me as I have never heard of it. I had to buy this online because the supermarkets I went to never had such thing. I have also chosen to make Twinkies because i think that it will appeal to all age groups, including children. The reason why I have chosen the dishes for my task is because they show a range of skills both high and medium.
They have a variety of textures, shapes and colours. I think that they are suitable for serving for international week and would be popular choices for the customers. The dishes I will be making show a variety of colours. The prime topside beef burger that I will be making will be very colourful as I will be putting lettuce, my own home- made mustard mayo, red onions, chips seasoned with rosemary and the sesame seeds on top of the burger bun. This dish will also have a wide range of textures. The chips will be crisp on the outside but fluffy on the inside.
The burger bun will be soft and the sesame seeds on top add flavour and texture to the dish. The lettuce will be crisp as well and the mayo will be smooth. The burger itself will be very Juicy. I think that my dish has a wide range of ingredient and are in season. The burger will take much more time to prepare and cook as I have to complete many things but that’s why I will be dovetailing so I can have time to clean afterwards. It will take me one and a half hours to prepare and cook my burger. I believe that my dish is saleable as t is well presented so it will not scare the costumers.
My burgers buns and burgers have to be proportional as it will not be fair if one of my costumers gets more than the other costumer, I will be proportioning my burgers by rolling the mincemeat and then halving it will a knife. I will also be doing this with my burger bun; I will be halving the dough and then making them round. I will portion my sesame seeds with a spoon and sprinkling them on to the top of my burger bun. My dish will be colourTul ana It will De well presented. I ne sesame seeds on top 0T tne Durger Dun well make it more appealing to the costumers.
The chips that will be seasoned will rosemary; sea salt and pepper will make it more colourful. My dish will also show a wide variety of cooking methods like grilling, baking and frying. My dish wills be suitable for everyone except for vegetarians as they cannot eat meat. So if I was to make it suitable for them I would use chicken instead of beef or use vegetables. In America burgers are full of fat and they are classed as unhealthy. My burger is unhealthy but I can change that by cooking them in the oven. I can also use low fat mustard to make my mayonnaise instead of full fat mustard.
My dish can also be made in bulks. My other dish that i will be making is called Twinkies which is very popular in American and other countries. It has a wide variety of colours. It will have a strawberry topping and it will also have blueberries on the side. This will add flavour and colour to my dish. The dish will also have a wide range of textures. The Twinkies well be spongy. The marshmallow filling will be very sticky. The Twinkies itself will be moist. The Twinkies will only take an hour to prepare and bake. I will be dovetailing so I can have more time in the end to clean up.
I think that the resentation of my dish will be very colourful even though there will be a lot of white. The Icing sugar on top will also make it look appealing to the costumer. My Twinkies will be well proportioned as I will be making my own Twinkie moulds and I will be cutting them out the same length and width. The Twinkies will be suitable for everyone. I is suitable for all ages as everyone loves desserts. This is a unhealthy dish because it will contain sugar and it will also contain a lot of fat from the butter. The berries that I will be using as decoration will make the dish look healthy and very colourful.

Season the mince to you taste and shape into 1 50g patties using your hand. Put all of the ingredients into a large mixing bowl. Mix all of the ingredients using an electric whisk. For the Twinkie moulds tear Offa large square of aluminium foil, then fold it in half one way, then the other, so you have a smaller square. Wrap the piece of foil around spice bottle, closing the ends leaving the top open. Remove the bottle and place the foil form on a baking sheet or in a large baking pan. Repeat with another one of the foil to make 10 total moulds. Spray the inside of the moulds with non-stick cooking spray set aside.
For the mustard mayonnaise, separate the egg yolks into a bowl and gradually stir in the oil until creamy in consistency, whisking all the time. Important to do this. Wash with soap. Also wash after handling raw foods like eggs and meat. Wearing an apron helps your clothes form getting dirty. Getting ready before starting will help you finish faster and makes you more organised. Measuring flour, butter, milk. Preheat the oven. Set aside to pickle while you make your burger. Pickle for one hour, measure with measuring Jug. Season with sea salt and pepper. Set aside. Sieve the flour to aerate the batter.
